Ph.D. in Agricultural Biotechnology. 1996, The Hebrew University of Jerusalem.
A research team leader at the Institute of Biochemistry, Food Science and Nutrition, he Hebrew University of Jerusalem. Engaged in teaching and investigating Natural Product and Food Chemistry. He is a specialist in bioactivities of natural products, focusing on polyphenolicvs and on saponins, and their potential actions in the gut. To that end, Kerem's research involves structure-elucidation and analysis of biologically active molecules using MS and NMR, and the studying their antioxidant, antimicrobial and activities. In the last decade, a major part of Kerem's research has been, and still is, devoted to the study of Israeli olive oils, as they are affected by genotype, environment and agronomy practices. He is operating closely with the Israeli Olive Board, heads the expert panels of olive oil and edible oils in the Standards Institution of Israel, and is a member of The National Nutrition Security Council. He has over 60 publications in peer-review scientific journals and has participated in over 30 Research and Educational funded projects by National and EU Organisms.
